Did I ever happen to mention that I love my farmer? Everyone should have their very own farmer to love. Mine is Della, of Happy Hooves Farm, and she brings into our area the most wonderful beef, pork, sausages, roasts, chickens of all types and eggs. Beautiful, fresh eggs laid by happy, free-range chickens. (Or is it hens?) All I know is, these birds are free as a bird, like real farmyard chickens, not like the [air-quote], er… you know… “free-range” chickens.
The interesting thing about nature is that she’s creative and prolific. Creativity tends not to move in straight lines nor standardized colors. So what we get in our dozens of eggs that Della brings is always a mix of sizes and colors. I had no idea that you literally could have green eggs with your ham! You know they all taste the same on the inside no matter the color of the shell, right? But the way these eggs with the screaming yellow yolk taste is worlds away from the nearly colorless things that factory farms produce.
